In Calgary’s Inglewood neighborhood, a new bistro is making waves with a menu that bridges Alberta’s culinary roots and contemporary dining trends. Prairie Hearth, opened just last month, has already built a reputation for serving dishes that celebrate local ingredients in bold, inventive ways.

Led by chef-owner Taryn McLeod, the restaurant draws inspiration from the traditional foodways of the prairies—bison, root vegetables, wild berries—while incorporating global techniques and plating styles. “Our goal is to showcase the simplicity and richness of what’s grown right here,” says McLeod, who previously worked at top kitchens in Vancouver and Montreal.

Signature dishes include a bison short rib braised in Saskatoon berry jus, roasted parsnip gnocchi, and pickled chanterelles served with rye crisps and whipped goat cheese. Everything, from the sourdough bread to the cured meats, is made in-house or sourced from producers within a 150-kilometer radius.

Beyond the menu, Prairie Hearth sets itself apart with its atmosphere. The minimalist interior features reclaimed wood, warm lighting, and an open kitchen that encourages guests to watch the team at work. Local artists' work adorns the walls, and even the ceramic plates are handmade by an Alberta-based artisan.

The bistro operates on a reservation-only model three nights a week, focusing on a prix fixe dining experience that changes seasonally. “It allows us to stay nimble and make the most of what’s fresh and available,” McLeod notes. “We want every meal to tell a story about this place and time.”

Reviews from early diners have been glowing, with many praising not just the food but the intentionality behind it. As Calgary’s food scene continues to evolve, Prairie Hearth is carving out a distinctive niche—one that honours the land while offering a refined, modern take on its bounty.
